Spicy Charred Chicken With Papaya Salsa
- 1 pound boneless skinless chicken breasts
- 1/4 cup olive oil
- 1 tablespoon dried oregano
- 1 tablespoon cumin seeds
- 1 teaspoon cayenne pepper
- 2 teaspoons salt flakes
- lemon wedges to serve
- 1 papaya small, seeded, peeled and diced
- 1 avocado seeded, peeled and diced
- 1/2 red onion finely diced
- 1/4 cup chopped parsley coarsely
- 1 lemon juiced
- 2 teaspoons brown sugar
- 1 red chili pepper long, seeded and finely chopped
- Score chicken breasts on one side, at 3/4-inch intervals. Place in a shallow dish. Mix oil, oregano, cumin, cayenne pepper and salt in a small bowl. Rub all over chicken. Refrigerate at least 15 mins to marinate.
- Preheat the grill to medium. Grill chicken 5-7 mins each side, until cooked through and lightly charred. Let stand, loosely covered with foil, 5 mins.
- Meanwhile, for the papaya salsa, combine all ingredients in a bowl and season to taste.
- Slice chicken. Serve with salsa and lemon wedges.
