Chickpea Chocolate Chip Cookie Dough Banana Bites
- 15 ounces chickpeas well rinsed and drained
- 1/4 cup cashew butter or almond butter
- 1/4 cup almond milk
- 1/3 cup chocolate chips
- 5 pitted dates
- 2 tablespoons coconut oil melted
- 3 teaspoons chia seeds ground
- 1 pinch sea salt adjust to taste
- 2 teaspoons vanilla extract
- 3 bananas sliced and frozen
- In a food processor or blender, combine all ingredients except chocolate chips and bananas. Pulse until smooth. Pour the chocolate chips and stir until evenly spread throughout.
- Spoon mixture on banana slices. Chill in the refrigerator or freeze for a frozen treat.
- Store in an airtight glass container for up to 1 week.
