Muffins With Artichoke And Cherry Tomato Sauce
- 1 1/4 cups flour
- 1 egg at room temperature, lightly beaten
- 3 13/16 tablespoons milk at room temperature
- 5 3/16 tablespoons extra-virgin olive oil
- 1 teaspoon baking powder
- salt
- tomato sauce
- 2 tablespoons artichoke
- Preheat the oven to 180C.
- Combine the flour with the baking powder and a pinch of salt in a bowl. Mix the egg, the milk, and the oil in another bowl.
- Pour the liquid ingredients over the dry ones and combine quickly.
- Add 2 tablespoons of the artichoke and cherry tomato sauce, combine briefly and fill the muffin liners to 3/4.
- Bake the muffins for approximately 25 minutes.
- Remove the muffins from the oven. They are excellent served warm to accompany cold cuts and cheeses.
