Chutney And Mustard Meatloaf
- 1 tablespoon olive oil
- 1 onion finely chopped
- 1 pound ground pork
- 1/3 cup dried breadcrumbs
- 2 eggs lightly beaten
- 2 slices bacon finely chopped
- 2 tablespoons finely chopped fresh parsley
- 2 tablespoons tomato chutney plus additional to serve
- 1 tablespoon coarse grain mustard
- salad to serve
- Preheat the oven to 350u0b0F. Grease a foil-lined 8 x 4 inch loaf pan
- Heat oil in a skillet on medium heat. Add the onion and saute for 4-5 mins, until tender. Cool slightly.
- Place ground pork, breadcrumbs, eggs, bacon, parsley, chutney, mustard and onion in a large bowl and season to taste. Mix until well combined. Spoon into prepared pan.
- Bake for 1 hour or until golden brown and cooked through. Let stand for 5 mins. Drain off any drippings, then remove meatloaf from pan. Serve sliced with salad and chutney.
