Strawberry Corn Muffins
- 1 cup yellow cornmeal
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 egg white
- 2/3 cup light coconut milk Canned
- 2 1/2 tablespoons honey
- 1 teaspoon white sugar
- 4 tablespoons coconut oil
- 1 teaspoon orange extract
- 1 teaspoon vanilla extract
- 12 sprays butter Non-Fat, Spray
- 1/4 teaspoon white sugar
- 1 cup strawberries Diced
- Preheat oven to 350 degrees. Line muffin tin with cupcake liners and spray each liner with non-fat cooking spray.
- Combine corn meal, whole wheat flour, baking powder and salt in a large bowl breaking any clumps.
- Into the corn meal mixture, add egg, egg white, coconut milk, honey, coconut oil, orange extract, and vanilla extract. Mix until well combined.
- Fold in the strawberries.
- Stray muffin tin with non-stick spray.
- Pour mixture into the muffin tins.
- Spray each muffin with butter and lightly dust white sugar.
- Bake for 20-25 minutes until edges are golden brown.
- Let cool for 10 minutes before removing from the muffin tin.
