Pork Tenderloin With Tangerine Honey Glaze
- 1 pork tenderloin
- 1 lemon juiced
- salt
- 3 tangerines juiced
- 1/4 onion
- 6 garlic cloves
- 2 tablespoons honey
- 1 cup port wine
- 1 tablespoon paprika
- 1 cup olive oil
- 3 cilantro sprigs
- Preheat oven to 180u0b0C (approximately 350u0b0F).
- Season pork tenderloin with lemon juice and salt.
- Marinate for 2-3 hours, or overnight.
- For the sauce, pulse onion and garlic in the food processor.
- Add tangerine juice, honey, wine, paprika, and olive oil.
- Blend well.
- Add chopped cilantro to the sauce.
- Drizzle pork loin with a little olive oil.
- Bake in preheated oven until surface starts to brown.
- Brush with sauce. Continue to roast.
- Occasionally turn pork loin and baste with sauce each time.
- When pork loin is almost done roasting, cut into slices, and brush with remaining sauce.
- Bake for 10 additional minutes. Serve with oven-roasted sweet potatoes and white rice, if desired.
