Italian Cream Cake With Icing
- 1 stick butter
- 1/2 cup shortening
- 2 cups sugar
- 2 cups flour
- 5 eggs separated
- 1 teaspoon soda
- 1 cup buttermilk
- 1 cup chopped pecans
- 1 cup coconut
- 1 teaspoon vanilla
- 5 egg whites stiffly beaten
- 8 ounces cream cheese
- 1/2 stick butter
- 1 box powdered sugar
- 1 teaspoon vanilla
- Cream butter and shortening.
- Add sugar and beat mixture until smooth.
- Add egg yolks and beat well.
- Combine flour and soda; add to cream mixture alternately with buttermilk.
- Stir in vanilla and add coconut and pecans.
- Fold in beaten egg whites.
- Pour into 3 (9 inch) greased and floured cake pans.
- Bake at 350 degrees for 30 minutes or until done.
