Quick Dinner: Chicken And Vegetable Stir Fry With Rice Noodles Recipe

  1. Start with cooking your side dish since the main meal is done very soon.nnStart with preparing your vegetables and cut them into your desired sizes. Cut your ginger, chilli, garlic, red onion, white onion, spring onions, green bell, yellow bell, red bell (if you have some I did not- it adds an extra colour), carrots and set aside on a plate.
  2. Now slice your chicken breast in thin slices and after season with salt, white pepper and black pepper and coat it in 1 tablespoon of corn starch (is a serving of 1-2 people).
  3. In a large pan heat up your oil (1 tablespoon for a serving of 1-2 people) and fry your chicken breast. Until almost done. Add your chilli, garlic and ginger and continue to fry for about 1-2 minutes. Now add your vegetables and continue to stir.
  4. Create your sauce in a bowl: cold water, 1 tablespoon of soy sauce (I use a mixture of light and dark), 1/2 tablespoon of corn starch, 1 tablespoon of tomato pure and 1 tablespoon on tahini or sesame oil (these two steps are optional - they add extra taste but it is not necessary).nnAdd to your pan and stir well. The sauce will thicken when it starts to boil. Stir around for about 3 minutes to ensure ale flavours combines and your vegetable will not be overcooked.
  5. Serve with rice, rice noodles or pasta.nnEnjoy.
