Chicken Soup With Pepper Tree Leaves
- 8 chicken drumsticks or 800g chicken pieces
- 2 tablespoons fish sauce
- 1 tablespoon ginger minced
- 3 cloves garlic minced
- 1/2 leek sliced, or 1 small onion, diced
- 1 chayote small, peeled and cubed, or green papaya
- 1 bunch leaves kawakawa, thoroughly washed to make sure there are no clingy caterpillars
- 3 cups water
- 1 tablespoon vegetable oil
- Heat oil in a large pot over medium high heat.
- Saute garlic, leek and ginger for 2 minutes or until fragrant.
- Add chicken and fish sauce then cook for 5 minutes or until color turns to white.
- Add water and let it boil.
- Lower the heat to medium and simmer until chicken meat is tender.
- Add cubed chayote and let it simmer for 5 minutes until they are tender.
- Add kawakawa leaves and simmer for another minute.
- Add more fish sauce if desired.
- Serve hot by itself or with steamed rice.
