Nopal With Flank Steak

  1. Grill or saute the tomatoes, onion, garlic and chile pepper together. Once fully grilled, mix them together and liquefy them into a sauce. (set them aside for later)
  2. Chop the nopal into small pieces and saute in a large pan with oil.
  3. Add a little bit of salt and cover the pan. Let it cook for 5 minutes, stirring occasionally. Cook until the nopal turns green.
  4. Uncover the pan and cook over high heat. Continue stirring and let everything cook until all the liquid has evaporated.
  5. Add the flank steak and cook for another 2 minutes.
  6. Add the sauce and let it cook until it begins to boil.
  7. Remove and serve with tortillas and beans for tacos.
