Nopal With Flank Steak
- 2 tomatoes small, sliced
- 1 onion small, peeled and sliced
- 1 garlic clove sliced
- 1 serrano pepper sliced
- 4 stalks nopal
- 1 teaspoon vegetable oil
- salt
- flank steak Cooked, cut into cubes
- Grill or saute the tomatoes, onion, garlic and chile pepper together. Once fully grilled, mix them together and liquefy them into a sauce. (set them aside for later)
- Chop the nopal into small pieces and saute in a large pan with oil.
- Add a little bit of salt and cover the pan. Let it cook for 5 minutes, stirring occasionally. Cook until the nopal turns green.
- Uncover the pan and cook over high heat. Continue stirring and let everything cook until all the liquid has evaporated.
- Add the flank steak and cook for another 2 minutes.
- Add the sauce and let it cook until it begins to boil.
- Remove and serve with tortillas and beans for tacos.
