Shrimp And Chorizo Gumbo
- 9/16 cup butter
- 7 2/3 tablespoons flour
- 1 onion diced
- 1 celery stalk sliced
- 1 1/8 pounds okra halved
- 1/2 cup fresh parsley roughly chopped.
- 7/8 pound chorizo thickly sliced
- 4 1/4 cups fish stock
- 1 3/4 pounds shrimp peeled but with tails left on
- salt
- ground black pepper
- In a Dutch oven, melt the butter and add the flour to it. Lower the heat and stir constantly until the mixture turns golden.
- Add the onion, celery, and okra. After a few minutes, add the parsley. Stir everything together.
- Add the chorizo and simmer for 5 minutes on low heat.
- Add the fish stock and simmer for another 20 minutes.
- Add the shrimp, salt and pepper to taste, and simmer for another 5 minutes.
- You can serve as is or over steamed white rice.
