Butternut Galliano
- 1 butternut squash large, also called butternut pumpkin
- 2 tablespoons Galliano liqueur original
- 1 tablespoon brown sugar
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1 tablespoon butter
- 1/2 teaspoon kosher salt
- 1 dash black pepper
- Preheat oven to 350 deg F.
- Cut squash in half, lengthwise down the middle. Using a spoon or an ice scream scoop, remove the seeds and stringy bits -- discard.
- Place squash face down in a 9X13 baking vessel. Add enough water to cover 1/2" of the squash. Bake for 90 minutes, or until tender.
- Carefully scoop out the tender squash into a medium bowl using a spoon or ice cream scoop, leaving the skin.
- Add remaining ingredients. Run for :30 seconds in a food processor (or mash with a potato masher) until smooth.
- Squash cools quickly so microwave for 1 minute before serving.
