Butternut Galliano

  1. Preheat oven to 350 deg F.
  2. Cut squash in half, lengthwise down the middle. Using a spoon or an ice scream scoop, remove the seeds and stringy bits -- discard.
  3. Place squash face down in a 9X13 baking vessel. Add enough water to cover 1/2" of the squash. Bake for 90 minutes, or until tender.
  4. Carefully scoop out the tender squash into a medium bowl using a spoon or ice cream scoop, leaving the skin.
  5. Add remaining ingredients. Run for :30 seconds in a food processor (or mash with a potato masher) until smooth.
  6. Squash cools quickly so microwave for 1 minute before serving.
