Chicken And Broccoli Fettuccini Dinner

  1. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Cook chicken for 2 minutes or until lightly browned (chicken will not be fully cooked at this point).
  2. Transfer chicken to a plate and set aside.
  3. Add remaining 1 tablespoon oil to pan; stir in onions and cook for 2 minutes.
  4. Add garlic, Italian herb seasoning and black pepper.
  5. Stir in chicken broth; bring to a boil.
  6. Add pasta and stir gently.
  7. Reduce heat to medium and cover pan with lid.
  8. Cook for 7 to 8 minutes, stirring once.
  9. Add chicken, broccoli, red bell pepper (if desired) and cream cheese; stirring to combine.
  10. Reduce heat to low, cover and continue cooking for 5 to 7 minutes or until chicken is cooked through and vegetables are tender.
  11. Stir in Parmesan cheese until melted and sauce has thickened. Serve immediately.
