Easy Cranberry Baked Brie
- 1 ounce cranberries
- 1/4 cup sugar
- 1/2 cup water
- 1/2 cup cranberry juice unsweetened
- 1/2 teaspoon powdered ginger plus a dash
- 8 ounces brie wedge
- 3 fresh ground black pepper or so twists of
- cocktail pumpernickel bread
- Preheat oven to 325 degrees.
- Reserve 1/3 c of cranberries. Put the rest of the cranberries and the next four ingredients into a small sauce pan; stir and bring to a boil. Let simmer 10-12 minutes until berries cook and juice thickens.
- Cut brie wedge (horizontally) into two half-inch pieces. Press reserved cranberries into one of the brie wedges; sprinkle a dash of ginger and a few grinds of black pepper over the pressed-in cranberries. Put remaining brie atop this; set in pie pan or oven-proof plate; bake for 20 minutes or until brie begins to melt. Spoon cranberry sauce over baked brie. Serve with cocktail pumpernickel bread or the crackers of your choice.
