Red Thai Curry With Lime Grass Recipe
- 1 teaspoon red curry paste
- 2 chicken breasts large
- 1 can coconut milk you can leave a little to decorate your dish
- 1/2 lime finely chopped, grass
- 1 teaspoon fish sauce
- 1 diced tomato
- 1/2 teaspoon palm sugar or brown sugar dissolved in hot water

- Start with boiling your rice 1:2 (one part rice and two parts water) on medium heat with a lid. It will leave you with a perfectly boiled sticky fragrant rice. You will not have to rinse the water from the rice since it will evaporate and just leave a perfectly boiled rice. It will take about 18 minutes.nnSlice your chicken breasts into thin slices and prepare your lime grass.
- Prepare a large pan and heat it up to medium heat. Add your red curry paste and 1/5 of your coconut milk and stir well. Add your lime grass.nnWhen you will see that the oil from the curry paste starts to separate it is time to add the chicken (it will take about 2-3 minutes) make sure the paste does not burn.
- Add your chicken and stir well. You can fry it on a higher heat if you wish to speed the procedure.ndd your tomato and stir well.
- Dissolve your sugar in hot water and mix it with your fish sauce and add it to the pan. Stir well.nhen all the chicken is done it is time to add your coconut milk (you can leave a little a side to decorate your dish) and stir well.
