Green Blueberry-Banana Pancakes

  1. Mash the banana.
  2. Add the egg, flour, sugar and baking powder and blueberries and mix. Slowly add the milk until you have a thik batter.
  3. Let the mixture sit for a couple of minutes
  4. Slowly add the milk until you have a thick batter.
  5. You will notice the batter becoming blue/purple ish due to the blueberry juice. This happens best when you bought frozen blueberries. This is essential to the colour later on.
  6. Heat a frying pan to moderate heat (just enough to bake the pancakes).
  7. Poor your batter into pancakes in the frying pan and bake really slow.
  8. You will notice the pancakes become a greenish colour. This is due to the excess baking powder interacting with the purple blueberry juice.
  9. Because of the low temperature the baking will take a while. Be careful not to turn the pancakes too early.
  10. Serve with honey or maple syrup. Best served right away - The colour will fade in a couple of hours.
