Green Blueberry-Banana Pancakes
- 1 banana
- 1 egg
- 2 3/8 tablespoons sugar
- 6 3/8 tablespoons flour
- 6 3/4 tablespoons milk
- 9/16 cup frozen blueberries
- 2/3 tablespoon baking powder
- Mash the banana.
- Add the egg, flour, sugar and baking powder and blueberries and mix. Slowly add the milk until you have a thik batter.
- Let the mixture sit for a couple of minutes
- Slowly add the milk until you have a thick batter.
- You will notice the batter becoming blue/purple ish due to the blueberry juice. This happens best when you bought frozen blueberries. This is essential to the colour later on.
- Heat a frying pan to moderate heat (just enough to bake the pancakes).
- Poor your batter into pancakes in the frying pan and bake really slow.
- You will notice the pancakes become a greenish colour. This is due to the excess baking powder interacting with the purple blueberry juice.
- Because of the low temperature the baking will take a while. Be careful not to turn the pancakes too early.
- Serve with honey or maple syrup. Best served right away - The colour will fade in a couple of hours.
