Mama'S Hermit Cake
- 1 lb. margarine, softened
- 1 (16 oz.) box light brown sugar
- 1/4 c. white sugar
- 6 eggs
- 5 c. plain flour
- 2 tsp. baking powder
- 1/2 tsp. soda
- 4 tsp. ground cinnamon
- 1/4 c. lemon juice
- 4 tsp. vanilla
- 1 tsp. almond flavoring
- 1 lb. red candied cherries, chopped
- 2 pkg. dates, chopped
- 2 c. chopped pecans
- Cream margarine with sugar until creamy.
- Add eggs, one at a time; add lemon juice, almond and vanilla flavoring.
- In a separate bowl, use 3/4 cup plain flour to coat cherries, dates and pecans.
- Set aside.
- In separate bowl, combine flour, baking powder, soda and cinnamon.
- Add flour a little at a time to sugar-egg mixture, using all of 4 1/4 cups.
- Add prepared fruit a little at a time until mixed well.
- Pour into greased and floured tube pan.
- Bake at 250u0b0 for 3 hours or until brown and tests done. Glaze while still hot and in pan.
