Mock Beef (Soy Protein) Dumplings
- 3/4 pound soy protein, Lightlife Smart Ground veggie protein crumbles
- 1/2 cup yellow onion chopped
- scallions cup chopped
- 2 1/2 tablespoons fresh ginger minced
- 3 cloves garlic minced and crushed into a paste
- 1 tablespoon olive oil
- 6 tablespoons water
- salt
- ground pepper
- 1 package dumpling wrappers
- In a large mixing bowl, combine the soy protein crumbles, onion, scallions, ginger, and garlic.
- Mix well using a large spatula or your hands.
- Add the salt, pepper, olive oil, and water.
- Continue mixing for a little bit.
- Cover the bowl with plastic wrap and let it sit for at least 30 minutes. (If you like, you can prepared the filling ahead of time and leave it in the refrigerator. When you are ready to make the dumplings, take them out and let them go to room temperature before wrapping.)
