Pasta Served With Three Fishes
- 1 slice salmon
- 1 slice unsalted cod
- 1 mackerel
- 7 ounces shellfish
- 2 7/8 cups elbow macaroni
- 1 bay leaf
- 2 tomatoes ripe
- 1 red pepper
- 1 hot chili
- 1 onions medium size
- 2 garlic cloves
- 5/8 cup olive oil
- Cook fish in boiling, salted water for 10 minutes.
- Remove fish, drain and let cool.
- Reserve fish cooking water.
- Remove bones and scales.
- Strain the water to remove any scales and set aside cooking water.
- In a pan, heat olive oil and slowly braise chopped onion and garlic cloves and olive oil until onion is translucent.
- Blanch tomatoes for a few seconds in boiling water. Peel tomatoes, quarter, core and cut into small cubes.
- Add diced tomatoes to pan. Dice pepper. Add pepper and laurel to pan.
- Cook briefly. Add 300 ml (approximately 1.5 cups) water and cover.
- Bring to a boil.
- Add shellfish and pasta.
- Stir well and season to taste.
- When the pasta is almost al dente, fold in prepared fish.
- Simmer until pasta is cooked and sauce is creamy.
- Remove from heat. To serve, garnish with chopped cilantro.
