Pasta Served With Three Fishes

  1. Cook fish in boiling, salted water for 10 minutes.
  2. Remove fish, drain and let cool.
  3. Reserve fish cooking water.
  4. Remove bones and scales.
  5. Strain the water to remove any scales and set aside cooking water.
  6. In a pan, heat olive oil and slowly braise chopped onion and garlic cloves and olive oil until onion is translucent.
  7. Blanch tomatoes for a few seconds in boiling water. Peel tomatoes, quarter, core and cut into small cubes.
  8. Add diced tomatoes to pan. Dice pepper. Add pepper and laurel to pan.
  9. Cook briefly. Add 300 ml (approximately 1.5 cups) water and cover.
  10. Bring to a boil.
  11. Add shellfish and pasta.
  12. Stir well and season to taste.
  13. When the pasta is almost al dente, fold in prepared fish.
  14. Simmer until pasta is cooked and sauce is creamy.
  15. Remove from heat. To serve, garnish with chopped cilantro.
