Chocolate Bourbon Pecan Tart
- 1 pie shell I use the refrigerated roll up kind
- 2 large eggs
- 2/3 cup brown sugar
- 1/3 cup dark corn syrup or light
- 2 tablespoons butter melted
- 1 1/2 teaspoons pure vanilla
- 2 tablespoons bourbon whiskey works too
- 1/3 cup chocolate chips I use more- enough to well cover the pie pan
- 2 cups pecan halves
- Follow directions for pie shells that include baking again
- preheat oven to 350
- In a medium bowl whisk the eggs, sugar, bourbon, vanilla and butter
- sprinkle chocolate chips into bottom of pie shell, pour egg mixture over. Arrange Pecan halve on top
- Bake at 350 for 20-25, reduce heat to 325 and bake for another 18-22 minutes until filling is set. Watch edges, cover with tinfoil if needed
