Christmas Banquet Salad(Serves 20)
- 1 (3 oz.) pkg. lime jello
- 1 (3 oz.) pkg. cherry or strawberry jello
- 5 c. miniature marshmallows
- 2 oz. Philadelphia cream cheese
- 2/3 c. mayonnaise
- 1 2/3 c. crushed pineapple, chilled
- 1/2 c. chopped pecans
- 2 c. whipped topping
- Dissolve 1 package lime jello in 1 cup hot water in double boiler.
- Add marshmallows and stir over hot water until marshmallows are almost dissolved.
- Let cool and add pineapple. Blend mayonnaise and softened cream cheese and add to lime mixture.
- Refrigerate until thick, stirring occasionally.
- Fold in topping and pecans.
- Pour in oblong pan.
- Refrigerate until firm. While this is setting, mix cherry or strawberry jello in 1 3/4 cups of hot water.
- Let cool until thickened.
- Pour over lime mixture and let set overnight.
