Spicy Chicken And Corn Soup
- 1 onion finely chopped
- 1 bird's eye chili pepper seeded and finely chopped
- 2 tablespoons flour
- 3 cups chicken stock
- 1 pound boneless skinless chicken breasts cut into thin strips
- 4 ears corn-on-the-cob kernels removed
- 1 cup milk
- 2 tablespoons chopped parsley freshly
- whole-grain bread to serve
- Spray the bottom of a saucepan with no stick cooking spray and heat on medium. Add the onion and chili pepper and cook for 3 mins, until soft. Stir in the flour and cook for 1 min. Whisk in the stock and 1 cup water. Bring to a simmer then add chicken. Simmer 3 for mins.
- Add the corn kernels and milk and simmer for 7 mins, until the corn is tender and chicken is cooked through. Add the parsley and season to taste. Serve with whole grain bread.
