Strawberry/Mango Spinach Salad
- 0.25 CUP vegetable oil
- 2 TBSP raspberry vinegar OR 2 TSP red wine vinegar
- 1 TSBP Worcestershire sauce
- 1 TBSP granulated sugar
- 2 TSP poppy sees
- 1 green onion, finely chopped
- 0.5 TSP salt
- SUGARED NUTS
- 0.5 CUP almonds, slivered or pecans
- 0.25 CUP granulated sugar
- 2 TSP water
- SALAD
- 2 BAGS or 3 LARGE BUNCHES spinach
- 1 CUP strawberries, sliced
- 1 CUP mango, chopped
- TO PREPARE ALMONDS, grease a large piece of foil and place on counter.
- Place nuts, sugar and water in a medium-sized frying pan or saucepan.
- Cook over MEDIUM heat, stirring frequently until sugar melts.
- As soon as sugar turns light golden, stir slowly and constantly with a wooden spoon until all sugar is an even golden shade and coats nuts (about 6 to 8 minutes).
