Impossible Beef Enchilada Pie
- 1 lb. ground beef
- 1 c. chopped onion
- 2 cloves minced garlic
- 1/2 tsp. oregano
- 1 (8 oz.) jar medium taco sauce
- 2 c. shredded Cheddar cheese
- 1 1/4 c. milk
- 3 eggs
- 3/4 c. Bisquick
- 2/3 c. Fritos crumbs
- 2 tsp. chili powder
- salt and pepper to taste
- Grease a 2 x 13-inch casserole thoroughly.
- Cook beef in skillet until brown.
- Add onion and garlic and cook until limp. Add half of the taco sauce and seasonings.
- Cover bottom of casserole with crumbs.
- Spread 1/2 cup of shredded cheese over this.
- Pour meat mixture over cheese.
- Beat eggs, adding milk and Bisquick, and mix thoroughly.
- Pour carefully over meat mixture. Bake at 400u0b0 for 30 minutes.
- Remove from oven and spread on the rest of taco sauce and remainder of cheese.
- Return to oven for 5 minutes until cheese melts.
- Let stand a few minutes, then cut into squares.
- Serves 6 to 8 generously.
