Cajun Red Beans And Rice
- 2 lb. pinto beans
- 1 (8 oz.) tomato sauce
- 1 medium bell pepper, chopped
- 2 large chopped onions
- 1 bag crab boil
- 4 to 6 dashes thyme
- 2 Tbsp. parsley
- 1 lb. smoked sausage
- 2 to 3 Tbsp. solid bacon grease
- 6 qt. water
- salt and pepper
- 3 dashes Tabasco sauce or Louisiana hot sauce
- 2 Tbsp. ketchup
- Soak beans overnight in water.
- Rinse and drain several times. Put beans in a large pot and add 6 quarts water, bell pepper, onions, thyme, parsley, bacon grease, tomato sauce, salt and pepper to taste.
- Bring these ingredients to boil, then add one bag of crab boil.
- (Note:
- Do not break open bag of crab boil.) Add Tabasco and ketchup.
- Cover pot and boil slowly until beans are done.
- When done, remove bag.
- Don't break bag.
- One hour before serving, cut smoked sausage into small round pieces and brown in skillet.
- Add to beans.
- Cook rice.
- Heat beans and sausage until good and hot.
- Serve over rice.
