Banana & Fig Spiced Oat Cookies
- 1/2 cup ground almonds
- 1/2 oat flour
- 1 1/2 cups quick cooking oatmeal
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cloves group
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 stick unsalted butter softened
- 1/2 cup brown sugar
- 1 large egg
- 1 banana ripe, smashed
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- 3/4 cup dried figs diced, or other dried fruit
- Preheat oven to 375 degrees F. Combine all dry ingredients in medium size bowl and whisk together. In separate bowl, cream (with hand or stand mixer) together butter and sugar until smooth. Add egg, molasses, banana, and vanilla and blend. Add in dry ingredients to wet mixture and blend until combined. If mixture is too moist, add 1/4 cup of oatmeal until the right consistency of a cookie batter. Fold in figs last. Refrigerate dough for 1-2 hours. This is very important or the cookies will separate when you bake them.
- After refrigeration, scoop 1 - 1 1/2 inch balls onto parchment lined baking sheet. You can use spoon or icecream scoop. Make sure to space 1 inch apart. Back for 10-12 minutes until golden brown. Cool for 15-20 minutes.
