Pizza With Golden Raisins, Mozzarella And Pine Nuts
- 1 1/2 cups unbleached flour
- 1/2 teaspoon yeast
- 1/2 teaspoon salt
- 3/4 cup warm water
- cornmeal
- 2 cloves garlic
- 12 ounces tomatoes whole, drained
- 1 teaspoon fresh oregano
- 6 fresh basil leaves
- 1/4 teaspoon red chili flakes dried
- 1/2 teaspoon salt
- 8 ounces fresh mozzarella sliced 1/4 inch thick
- 1/4 cup golden raisins
- 2 tablespoons pine nuts
- Combine flour, yeast and salt in medium mixing bowl. Whisk to combine. Stir in water and mix until combined. Knead dough on floured surface 1 minute. Return to bowl and let rise, covered 2-3 hours.
- Place garlic in blender and pulse on setting 3 (chop), 3-4 times. Add remaining sauce ingredients and pulse on setting 3 (chop) 4-5 times.
- Preheat oven to 450 degrees.
- On generously floured surface, shape dough into 10-12 inch disk. Place dough on baking pan sprinkled with cornmeal. Top dough with 1 cup sauce, fresh mozzarella, raisins and pine nuts. Bake 10-12 minutes until crust is brown and toppings are cheese is melted.
