One-Dish Chicken Shortcake
- 4 Tbsp. margarine
- 1 c. chopped onion
- 2 c. coarsely chopped cooked chicken
- 1 c. sour cream
- 1/2 tsp. thyme
- 1/4 tsp. sage
- 1/4 tsp. salt
- 1 (4 oz.) can mushroom pieces
- 1 c. grated Cheddar cheese, divided
- 1 c. yellow cornmeal
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. flour
- 1/3 c. milk
- 1 egg, lightly beaten
- 1 (17 oz.) can creamed corn
- dash of cayenne pepper
- Preheat oven to 425u0b0.
- Melt margarine in a 10-inch saute pan; add onion and saute until soft.
- Remove from the heat and add chicken, sour cream, thyme, sage, salt, drained mushrooms and 1/2 cup of the grated cheese.
- Set aside.
