Croatian Tripe
- 3 tablespoons sunflower oil
- 1 onion 250 g, chopped
- 4 cloves garlic chopped
- 15/16 cup carrots chopped
- 5/8 cup celery root chopped
- 9/16 cup bell pepper fresh, chopped
- 5 1/4 ounces bacon cut into small pieces
- 1 1/8 pounds tripe precooked
- 1 tablespoon paprika sweet red, ground
- 1 1/2 tablespoons tomato puree
- 1 bay leaf
- 3 3/8 cups beef broth from 1 cube
- 1/3 cup Parmesan cheese grated
- In a large saucepan, heat the sunflower oil. Add the onion, garlic, celery root, carrot, bell pepper and pancetta and saute for 3 minutes or until they are soft.
- Add the tripe, sweet red paprika, tomato puree and bay leaf, stir.
- Add the beef broth, cover the pan and bring to the boil. Lower the flame and cook over low heat for 20 minutes.
- Serve sprinkled with grated Parmesan cheese.
