Mashed Potato, Leek, And Speck Gratin
- 2 1/4 pounds potatoes
- 2 tablespoons olive oil
- 1 onion chopped
- 5 cups leeks cut into small pieces
- 2 13/16 ounces speck or bacon
- 2 1/8 tablespoons softened butter
- 5/8 cup milk warm
- 1 egg
- 3 1/8 ounces grated cheese raclette type
- Boil peeled potatoes in salted water for 20 minutes until tender.
- Heat olive oil in a pan, add onion and leeks. Cook over medium heat for 10 minutes, stirring often.
- Add speck or bacon, and cook for 5 minutes.
- Preheat oven to 170 degrees Celsius.
- Drain the potatoes and mash with a fork. Add butter, milk, and egg.
- Add leek mixture.
- Add salt and pepper, and half of the grated cheese. Put everything in a baking dish, and cover with remaining grated cheese.
- Bake for 35 to 45 minutes until the gratin is golden brown.
- Serve with a green salad.
