Mashed Potato, Leek, And Speck Gratin

  1. Boil peeled potatoes in salted water for 20 minutes until tender.
  2. Heat olive oil in a pan, add onion and leeks. Cook over medium heat for 10 minutes, stirring often.
  3. Add speck or bacon, and cook for 5 minutes.
  4. Preheat oven to 170 degrees Celsius.
  5. Drain the potatoes and mash with a fork. Add butter, milk, and egg.
  6. Add leek mixture.
  7. Add salt and pepper, and half of the grated cheese. Put everything in a baking dish, and cover with remaining grated cheese.
  8. Bake for 35 to 45 minutes until the gratin is golden brown.
  9. Serve with a green salad.
