Bourbon Maple Syrup, Hot Sauce And Lime Glazed Salmon

  1. Preheat oven to 400 degrees
  2. Prepare glaze by whisking Blast hot sauce, maple syrup, lime zest, lime juice, and garlic together in a small bowl. Set aside.
  3. Rub salmon with olive oil and season with salt
  4. Heat a liberal amount of grapeseed oil in a large oven-safe nonstick pan over high heat until very hot
  5. Place salmon in the pan skin side down (making sure there is plenty of oil beneath the salmon to prevent sticking)
  6. Saute for a few minutes until a crust begins to form
  7. Remove from heat, spoon/brush some of the maple syrup/Blast glaze over the salmon (reserving about half the glaze)
  8. Slide the pan into the oven and continue to cook the salmon until just cooked through
  9. Remove from the oven and baste with the pan sauce
  10. Plate salmon and spoon the remaining glaze over the salmon
