Poppy Seed Waffles With Cherry Compote
- 15 ounces cherries cans, in syrup, drained, 1 cup syrup reserved
- 1/2 cup granulated sugar
- 1 cinnamon stick
- 4 teaspoons cornstarch mixed with 1 tbsp water
- 1/2 cup butter softened
- 3 eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 cups milk
- 1 teaspoon vanilla extract
- 3 tablespoons poppy seeds
- greek yogurt to serve
- honey to serve
- For the cherry compote, combine reserved cherry syrup and 1/4 cup sugar. Heat gently until sugar dissolves. Add cinnamon stick and simmer for 5 mins then add cherries and cornstarch slurry and simmer for 3-4 mins, stirring, until thickened.
- For waffles, cream butter and remaining sugar then gradually add eggs. Add flour, baking powder, milk, vanilla extract and poppy seeds and mix until smooth. Preheat a waffle maker and spray lightly with oil. Add 1/10 of batter and cook until golden. Repeat to make 10 waffles in total. Serve hot topped with Greek yogurt, honey and cherry compote.
