Succulent Shrimp Pasta And Peas With Mushrooms And Fresh Herbs
- 2 cups frozen peas or fresh
- 1 pound pasta white or wheat
- 2 tablespoons olive oil
- 3 cups chopped onion
- 2 cups orange bell peppers chopped red, yellow
- 4 cups mushrooms crimini, shitaki, and portabello
- 1/2 cup white wine
- 1/3 cup chicken stock
- 1 pound large shrimp
- 1 tablespoon fresh sage
- 1/2 teaspoon dried thyme
- salt
- pepper
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese fresh
- Blanche peas for approximately 5 to 10 minutes so they are still bright green and just tender.
- Set aside.
- Cook pasta according to box directions.
- Saute onions, peppers, and mushrooms in olive oil.
- Add wine to deglaze pan for about 5 to 7 minutes.
- Pour in chicken stock.
- Add shrimp. Cook approximately 5 minutes until pink.
- Add herbs, peas, salt and pepper.
- Add cream.
- Then toss in pasta.
- Sprinkle with fresh grated parmesan cheese.
