Not So Black Bottom Cupcakes
- 2 cups brown sugar
- 1 3/4 cups white flour organic
- 3/4 cup unsweetened cocoa powder organic
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 cup strong coffee at room temperature
- 1/2 cup vegetable oil
- 2 eggs
- 8 ounces cream cheese block of
- 4 tablespoons white sugar organic
- 2 eggs
- 2 tablespoons flour organic
- 1 cup mini chocolate chips
- Preheat the oven to 350 degrees F.
- Grease or line the cupcake pans.
- Whisk together the brown sugar, flour, cocoa powder, baking soda/powder, cinnamon and salt.
- Mix in the buttermilk, coffee, oil and eggs.
- Fill each cupcake about 1/2 full.
- In another bowl, beat together the cream cheese and sugar.
- Mix in the eggs and flour.
- Spoon a tablespoon of the cheesecake mixture over each cupcake.
- Sprinkle with chips.
- Bake for 20-25 minutes, or until an inserted toothpick comes out clean.
