Delicious Gingerbread Cake With Orange Glaze
- 2 eggs
- 3 sugar decilters
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 tablespoon cinnamon
- 1/2 teaspoon ginger
- 5/8 cup sour cream
- 3 1/2 tablespoons butter or margarine
- 5 1/4 tablespoons butter or margarine
- 1 tablespoon orange juice freshly squeezed
- 1 Orange grated rind of
- 1 1/2 cups powdered confectioners sugar
- orange slices thin, for top decoration
- Preheat oven to 350*F.
- Beat eggs and sugar white and fluffy. Using a wooden spoon, add flour mixed with baking soda, cinnamon and ginger. Mix in sour cream and lastly the cooled melted butter.
- Pour batter into a greased and floured baking pan, 20 x 30 cm.
- Bake on the middle rack of the oven for about 30 minutes.
- Turn the cake onto a cooling rack and let in cool down.
- With an electric mixer, whisk together all the ingredients for glaze. The glaze will be shiny and smooth. Spread it over the cake. Cut the cake into pieces and garnish each piece with a thin orange slice.
