Granola Scones
- 3 ounces granola fruit
- 1 apple cored and chopped
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 cup soft brown sugar
- 9 tablespoons butter cold, diced
- 1 egg
- 1/3 cup buttermilk cold
- First, mix the granola with the apples in a bowl. Next, in a separate bowl, sift the flour with the baking powder, baking soda, sugar and 1/4 tsp of salt. Add the butter and quickly rub into the flour with your fingers so that the mixture resembles breadcrumbs. Beat the egg and the buttermilk together in a bowl, stir into the flour. Next, stir in the apples and granola. Bring it together with your hands to form a dough; it should be quite dry.
- Transfer the dough to a floured work surface and press it out to a 4 x 9 inch rectangle. It should be about 3/4 inch thick. Using a pastry cutter, cut out the desired number of scones, transfer them to a baking sheet that has been lined with parchment paper.
- Bake in a preheated oven at 400u0b0F until the scones are golden brown. Remove from the oven and transfer to a wire rack to cool before serving.
