Saturday Night Omelet
- 7 eggs plus a splash of milk - beaten
- 1 bell pepper - sliced
- 1/2 onion - sliced
- 2 cloves garlic - chopped
- 1 tablespoon olives pimento, - chopped
- 1 tablespoon sun dried tomatoes - chopped
- 1 quart button mushrooms - sliced
- 1/2 cup monterey jack cheese - grated
- 1/4 cup Parmesan cheese - grated
- 1 dash salt
- 1 dash black pepper
- 1 dash chili powder
- 1 dash garlic powder
- olive oil Drizzle of
- Heat a large frying pan with a drizzle of olive oil. Add the veggies and saute until the onion is transparent and a nice color is on the veggies.
- Crack the eggs in a bowl with a splash of milk, the seasonings and the parmesan cheese and beat.
- Pour into the pan with the sauteed veggies and scatter the grated Monterey cheese on top.
- Lightly cover the omelet until set.
