Saturday Night Omelet

  1. Heat a large frying pan with a drizzle of olive oil. Add the veggies and saute until the onion is transparent and a nice color is on the veggies.
  2. Crack the eggs in a bowl with a splash of milk, the seasonings and the parmesan cheese and beat.
  3. Pour into the pan with the sauteed veggies and scatter the grated Monterey cheese on top.
  4. Lightly cover the omelet until set.
