Citrus Cookies

  1. Preheat oven to 200 degrees Celsius.
  2. Beat the margarine and the sugar until fluffy and whitish, then, gradually, add the egg yolk.
  3. Sift the flour into the mixture, stirring well.
  4. Add the grated orange, lemon, and lime peel, along with the orange juice, and mix until the mixture is creamy.
  5. Roll the dough out on a lightly floured surface.
  6. Cut out circles, or half-moons.
  7. Place in baking pans, and prick the surface with a fork.
  8. Beat the egg white lightly, and brush the biscuits.
  9. Sprinkle with sugar.
  10. Bake for 12 to 15 minutes. Then transfer to a cooling rack.
  11. Let cool completely so cookies get crunchy.
