Citrus Cookies
- 7 1/8 tablespoons margarine softened
- 6 tablespoons sugar
- 1 egg separated
- 1 5/8 cups flour
- 1 orange zest and juice
- 1 lime zest
- 1 lemon zest
- 3 tablespoons orange juice
- Preheat oven to 200 degrees Celsius.
- Beat the margarine and the sugar until fluffy and whitish, then, gradually, add the egg yolk.
- Sift the flour into the mixture, stirring well.
- Add the grated orange, lemon, and lime peel, along with the orange juice, and mix until the mixture is creamy.
- Roll the dough out on a lightly floured surface.
- Cut out circles, or half-moons.
- Place in baking pans, and prick the surface with a fork.
- Beat the egg white lightly, and brush the biscuits.
- Sprinkle with sugar.
- Bake for 12 to 15 minutes. Then transfer to a cooling rack.
- Let cool completely so cookies get crunchy.
