No Bake Sour Cherry Cheesecake In A Glass
- 1 1/4 cups cream cheese
- 2/3 cup sweetened condensed milk
- 2 teaspoons lemon zest
- 4 3/8 ounces digestive biscuits /graham crackers, in crumbs, see preparation
- 1 1/4 cups sour cherries drained, in syrup, canned
- To make crumbs from the biscuits, pulse in a food processor (or use a blender) until they're finely ground.
- Put the cream cheese and the sweetened milk in a large bowl. Using an electric hand mixer (or a stand mixer) beat until you get a smooth and fluffy result (about 2 minutes). Start at a lower speed and turn it up as the cream thickens. Add the zest and the lemon juice and continue to mix for half a minute.
- In a short glass or jar add 2 tablespoons of crushed biscuits, then 2 tablespoons of cream..
- Repeat the process and garnish with 2 tablespoons of sour cherries.
- Do the same in 3 more glasses and put them all in the fridge at least for 20 minutes. As simple as that! Enjoy!
