Chili Pie
- mashed potatoes enough to cover the bottom of a baking tray
- olive oil
- 1 onion small
- 3 garlic cloves
- 2 cans tomato
- 2 coriander sprigs
- 1 1/8 pounds ground beef
- salt
- 1 can red beans cooked
- mozzarella cheese
- Preheat oven to 180 degrees Celsius.
- Cover the bottom of a baking tray with mashed potatoes.
- Heat a drizzle of olive oil in saucepan on medium heat.
- Add the minced onion and garlic cloves, and let cook.
- Add the tomatoes and coriander, and bring to a boil
- Add the meat, stirring and separating the pieces well. Cover and let cook for about 10 minutes, stirring once or twice.
- Check the seasoning.
- Add the drained beans to the saucepan, mix well, and bring to a boil.
- Remove from heat, and pour in baking tray on top of the mashed potatoes.
- Cover the mixture with mozzarella cheese, and bake until golden.
