Double Cookie Stuffed Brownies

  1. For the brownies:nlace an oven rack in lower middle position and preheat to 350 degrees F. line an 8-inch square baking dish with foil and spray lightly with nonstick cooking spray; set aside.nn a heatproof bowl set over a pan pf barely simmering water, melt the chocolate and butter, stirring occasionally until smooth. Whisk in the cocoa powder until smooth. Set aside to cool.nn the medium bowl, combine the eggs, sugar, vanilla and salt; whisk until combined, about 15 seconds. whisk in the warm chocolate mixture until incorporated. Then stir in the flour with a wooden spoon until just combined. (it took me a while to get the flour evenly incorporated and i was worried it would affect the texture of the brownies, but they turned out fabulously-no need to worry.)
  2. Eggless cookie dough:neat the butter, sugars, and vanilla with electric mixer until creamy. Add the soy milk and beat well. Add in the salt, baking soda, and flour and slowly mix until combined. Stir in chocolate chips.
  3. Line a 13 x 9 inch pan with greased aluminum foil. Spread a layer of brownie batter.
  4. Wrap Oreos in cookie dough, and place in a line on the brownie batter.
  5. .Top with more batter until covered
  6. Bake 325 degrees F for about 30 minutes, or until a toothpick plunged into the middle comes out fairly clean.
  7. Let cool completely in an before carefully using the aluminum foil to lift out and slice.
