Bran Muffins
- 1 1/4 c. all-purpose flour
- 1/2 c. sugar
- 1/2 tsp. salt
- 1 Tbsp. baking powder
- 2 c. All-Bran cereal
- 1 1/4 c. milk
- 1 egg, beaten
- 1/4 c. vegetable oil
- 1/2 c. margarine
- 1/3 c. fruit sweetener
- 1/3 c. unsweetened applesauce
- 1/2 c. nonfat yogurt
- 2 eggs
- 1 1/3 c. flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. vanilla
- 1 1/2 c. fresh or frozen blueberries
- 1/2 c. chopped pecans (optional)
- Cream margarine, fruit sweetener, applesauce and yogurt.
- Beat in eggs, one at a time. Combine dry ingredients separately and stir into batter.
- Add vanilla; add blueberries and nuts.
- Spoon batter into 15 muffin cups which have been sprayed with nonstick coating.
- Bake for 20 to 25 minutes at 350u0b0.
- Makes 15 muffins.
