Omelette In A Pan As You Like It.

  1. Slice the garlic into thin slices. Chop all other vegetables into small cubes. Grate the Parmesan.
  2. Heat the coconut oil on the medium size pan.
  3. On the low heat fry the garlic slices to light brown chips(circa 2 min) and remove from pan before continuing.
  4. Add carrots and paprika to pan... Fry for about 3 min...
  5. ...add onion... fry another 2 min...
  6. ...add tomato and half of the chili peppers and fry another 3 min or until all veggies are soft.
  7. Meanwhile whip the eggs, add milk, salt and pepper and keep whipping until veggies are soft. Pour the eggs on top of the veggies. Cover pan with the lid and let it cook 10-15 min... or until the omelette has risen enough and wants to push of the lid off :-)
  8. Lift the lid and cover the settling omelet with Parmesan chees. Cover the pan with the lid for one more minute so the cheese can melt.
  9. For serving cut the omelette to four pieces and sprinkle with your choice of greens ( parsley, dill etc)
  10. Buon Appetito!!!
