Molded Vegetable Salad
- 4 envelopes unflavored gelatin
- 1/2 c. cold water
- 2 c. boiling water
- 1/4 c. lemon juice (2 lemons)
- 1/4 c. sugar
- 2 tsp. salt
- 2 c. mayonnaise
- 2 medium-size yellow onions, finely chopped
- 1 c. coarsely chopped sweet green pepper
- 1 c. coarsely chopped sweet red pepper
- 1 c. finely diced celery
- 2 c. medium coarsely shredded cabbage
- 3 c. medium coarsely shredded carrots
- Soften gelatin in cold water in a large, heatproof bowl, for 5 minutes.
- Mix in 1 1/2 cups of the boiling water, lemon juice, sugar and salt; stir until gelatin is completely dissolved.
- Mix the remaining 1/2 cup water with the mayonnaise in a small bowl. Mix into the gelatin mixture along with the onion until smooth and well blended.
- Stir in green and red peppers, celery, cabbage and carrots.
