Matcha Lemon Zest Raw Cheesecake
- 1/2 cup almonds
- 1/2 cup prunes or dates
- 1/2 cup oats
- 1 1/2 cups cashews
- 1 lemon zested & juiced
- 1/3 cup coconut oil melted
- 2/3 cup almond milk
- 2 teaspoons tea matcha
- 1/3 cup maple syrup
- In a food processor, pulse the almonds until ground. Add prunes and pulse until they are thoroughly mixed.
- Place mixture in a medium bowl and combine in the oats. Mix with clean hands together and press into the bottom of a greased (coconut oil) springform pan.
- Soak cashews ahead of time (for 12 hours). Zest & juice your lemon.
- In a blender combine all the ingredients and blend for about 3-4 minutes or until smooth and creamy. Add more almond milk if you need more liquid.
- Pour the mixture into the springform pan(s). Freeze for 3-4 hours, then serve.
