Matcha Lemon Zest Raw Cheesecake

  1. In a food processor, pulse the almonds until ground. Add prunes and pulse until they are thoroughly mixed.
  2. Place mixture in a medium bowl and combine in the oats. Mix with clean hands together and press into the bottom of a greased (coconut oil) springform pan.
  3. Soak cashews ahead of time (for 12 hours). Zest & juice your lemon.
  4. In a blender combine all the ingredients and blend for about 3-4 minutes or until smooth and creamy. Add more almond milk if you need more liquid.
  5. Pour the mixture into the springform pan(s). Freeze for 3-4 hours, then serve.
