Chocolate Banana Jelly Roll

  1. Preheat oven to 400u0b0F. Line a 13x15 inch baking pan with parchment paper.
  2. Whisk egg whites with 2 tbsp cold water to stiff peaks. Gradually whisk in 1/2 cup sugar and 1/4 tsp vanilla. Sift flour, baking powder and cocoa powder over top then fold in. Transfer to prepared pan and bake for 12 mins. Turn out onto a damp tea towel sprinkled with sugar. Discard parchment paper and let cool for 30 mins.
  3. Meanwhile, combine cream cheese, remaining sugar and 1/4 tsp vanilla. Combine 3 tbsp with bloomed gelatin and gently heat until gelatin melts. Mix into remaining cream cheese mixture. Fold in whipped cream, cubed bananas and 1/2 of the chocolate. Spread over cake, leaving a 1/3 inch border. Roll up, using the tea towel as a guide, then chill for 2 hours.
  4. Melt remaining chocolate over low heat. Lay halved bananas over chilled jelly roll and drizzle melted chocolate over top. Dust with powdered sugar. Serve immediately.
