Peanut Butter Banana Muffins
- 1 cup rolled oats
- 2/3 cup soy milk
- 1 teaspoon vinegar
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 peanut butter
- 2 banana small or 1 1/2 medium ripe
- 1/2 cup brown sugar depending on taste
- 1 tablespoon ground flax seed
- 1 teaspoon vanilla extract
- 2 tablespoons rolled oats
- 1 tablespoon whole wheat flour
- 1 teaspoon cinnamon
- 2 tablespoons agave or honey
- Heat oven to 350 degrees.
- Combine oats, soymilk, vinegar, and mashed bananas in a bowl and let sit for a few minutes.
- Add peanut butter, flour, baking powder, baking soda, salt, vanilla, and flax.
- Mix until just combined.
- In a small bowl combine the smaller portion of oats, flour, cinnamon, and agave. Mix well..
- After placing 1/4 cup of muffin mixture into a 12-cup muffin tin, top with the cinnamon mixture.
- Bake for 20 minutes or until golden and cooked through.
