Pumpkin Harvest Bars
- 1/2 c. raisins
- 1/2 c. walnuts, chopped
- 2 Tbsp. flour
- 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/2 c. shortening
- 1 c. brown sugar, packed
- 2/3 c. pumpkin
- 1/2 tsp. vanilla
- 2 unbeaten eggs
- Combine raisins, walnuts and 2 tablespoons flour.
- Sift together 1/2 cup flour, salt, baking powder, soda, cinnamon, nutmeg and ginger.
- Set aside.
- Melt shortening in saucepan.
- Stir in brown sugar.
- Remove from heat.
- Blend in pumpkin, vanilla and eggs one at a time and beat well.
- Add to dry mixture.
- Pour in a well greased 9 x 9 x 2-inch pan.
- Bake at 350u0b0 for 30 to 35 minutes.
- Cool and cut into bars.
- Sprinkle with powdered sugar.
