Grain Free Grassfed Meat And Veggie Loaf
- 1/2 cup cream pastured, or whole milk
- 1 egg pastured, slightly beaten
- 1 teaspoon sea salt Celtic, and ground pepper to taste
- 1/2 teaspoon dry mustard
- 1 tablespoon aged balsamic vinegar
- 1/2 cup flaxseed meal
- 1/4 cup coconut flour
- 1 cup sliced carrots thinly, or zucchini or squash or mushrooms
- 1 onion chopped
- 2 hard boiled eggs peeled
- 4 tablespoons ketchup organic
- 1 tablespoon aged balsamic vinegar
- Preheat oven to 350 degrees. In a large bowl, combine the cream/milk, beaten egg, salt and pepper, dry mustard, balsamic vinegar, flaxseed meal and coconut flour. Let the mixture sit for 5 minutes and then add ground beef, veggies and onion.
- Mix to incorporate all ingredients. In a 9X13-inch glass baking dish, shape the meat mixture into a loaf, hiding the eggs inside. Bake 55 minutes.
- Meanwhile mix the ketchup and the remaining tablespoon of balsamic vinegar. Brush half of this mixture onto the loaf and return to the oven for 5 minutes.
- Cool the meat loaf for 5 minutes and slice to reveal cross section of eggs. Serve with remaining ketchup/vinegar mixture.
