Grain Free Grassfed Meat And Veggie Loaf

  1. Preheat oven to 350 degrees. In a large bowl, combine the cream/milk, beaten egg, salt and pepper, dry mustard, balsamic vinegar, flaxseed meal and coconut flour. Let the mixture sit for 5 minutes and then add ground beef, veggies and onion.
  2. Mix to incorporate all ingredients. In a 9X13-inch glass baking dish, shape the meat mixture into a loaf, hiding the eggs inside. Bake 55 minutes.
  3. Meanwhile mix the ketchup and the remaining tablespoon of balsamic vinegar. Brush half of this mixture onto the loaf and return to the oven for 5 minutes.
  4. Cool the meat loaf for 5 minutes and slice to reveal cross section of eggs. Serve with remaining ketchup/vinegar mixture.
