Butterfly Effect For A Perail Happy Hour Braid

  1. In a skillet, heat the olive oil, and saute the spinach with salt and pepper. Add the sun dried tomatoes. Cook for 3 to 4 more minutes, while stirring.
  2. Roughly chop the mixture with a knife.
  3. Preheat oven to 180 degrees Celsius..
  4. On baking sheet, roll out the puff pastry.
  5. Place the spinach mixture in the middle of the dough on a line. Cover with slices of Perail cheese. Cut the strips diagonally (width 1.5 centimeters) on the two sides of the dough. Fold a strip taken on the right then one taken on the left of the spinach cheeese mixture to form a braid (see photo).
  6. Brush with egg yolk, and sprinkle with a little dried thyme.
  7. Bake 15 to 20 minutes until the braid is golden brown.
